Sweet Potato Salad

with a spicy orange reduction

Light but filling this salad with have you licking the plate when you are done.


  • 500g sweet potatoes, skin on and sliced

  • 2Tbsp olive oil

  • Juice of two oranges and zest

  • 1tsp cinnamon

  • 1 handful of fresh coriander, chopped

  • Salt and pepper to taste


  1. Preheat oven 180°C

  2. Rub sweet potatoes with olive oil and bake for about 20 minutes or until soft but still firm.

  3. Remove from the heat and set aside to cool.

  4. In a medium saucepan bring orange juice and cinnamon to a boil.

  5. Reduce the heat and simmer for 5 minutes and add orange zest.

  6. Remove from the heat and allow to cool.

  7. Place coriander leaves and sweet potatoes on a serving dish.

  8. Drizzle with orange juice reduction, sprinkle some orange zest and season with salt and pepper.
