Crisp Tart

A Tart full of Peppermint goodness.


2 packet tennis biscuits
(I used 1 packet choc mint flavored and 1 packet original)
1 can caramel treat (mixed until smooth)
500 ml fresh cream
200 g Peppermint Crisp chocolate bars (grated)
Mint leaves for garnish


1. In a 2l dish arrange a layer of the tennis biscuits at the bottom of your dish, ensuring that the bottom of the dish is covered.
2. Whip the cream until stiff peak stage, add the caramel treat and half of your grated chocolate and combine well.
3. Spread a generous amount of the mixture over the tennis biscuits and spread evenly (you may sprinkle little bit of grated chocolate). Add another layer of tennis biscuits and caramel mixture and continue this process untill your dish is full.
4. Decorate with the remaining grated peppermint crisp chocolate and place in the fridge to set or overnight. Serve with dollops of cream and mint.
