Mopane Worms in Tomato Sauce

I love mopane worms. I do not tire of eating them! They are really easy to prep and simple to cook, either stewing, boiling or frying. I tend to continuously experiment with ways of cooking  and serving them. Don’t knock them, till you try them!!

INGREDIENTS

FOR THE MOPANE WORMS

  • 1 cup dried mopane worms

  • 2 cups boiling water

  • 1 tbs cooking oil

  • 1 cup water

  • 1 medium onion (chopped)

  • 2 tomatoes (chopped)

  • 1 tsp paprika

  • pinch of salt and pepper to season

FOR THE PAP

  • 4 cups hot water

  • 1 cup cold water

  • 2 tbsp white vinegar

  • 3 cups mealie meal

METHOD

for the mopane worms…

  1. In a large bowl soak the mopane worms in 2 cups of boiling water for an hour or until soft. Rinse several times.

  2. Transfer mopane worms to a pot of 1 cup boiling water and oil simmer for 5-10 minute

  3. Add onion, tomatoes and paprika and simmer for another 5-10 minutes until the mixture thickens.

  4. Serve with pap

for the pap…

  1. In a medium saucepan add hot water and bring to a boil and add the vinegar.

  2. In a separate bowl, mix  one cup of mealie meal and one cup of cold water until it forms a soft lump-free paste.

  3. Add the mixture to the boiling water and stir till the mixture becomes thick

  4. Reduce the heat and simmer for about 5- 7 minutes

  5. Add the rest of the mealie meal (a little at a time), stirring and beating with a wooden spoon until all mixed.

  6. Cover and simmer for 5 minutes, stir again and then cook for another 5 minutes or until cooked.

  7. Allow to cool slightly before serving with Mashodzha (Mopane worms)
